Mustard Foods has introduced a new Vegan Gravy – what is it and why is it necessary? Vegan Gravy is essential for any modern restaurant catering to vegan and dairy free customers.

What’s the difference between vegan and regular gravy?

Gravy is typically made with beef drippings or beef stock, and sometimes butter, to achieve a rich flavour so it’s not suitable for vegetarians or vegans. Our Vegan Gravy achieves a similar depth of flavour using tomato purée, mushroom, and soy sauce. It’s become essential for restaurants to cater to vegetarians, so while our classic gravy is delicious, you should keep other options on hand.

How do you make Vegan Gravy?

Our experienced cooks start by sautéing the aromatics – onion and garlic are gently sautéed with bay leaf and thyme. We stir in tomato paste before deglazing with dry white wine. Mushroom stock and soy sauce are added to create a rich umami flavour without any meat or dairy. After a slow simmer, cornstarch is added in the final stages to adjust the viscosity to a perfect pourable consistency.

What can I do with Vegan Gravy?

This versatile gravy can be used for Sunday Roast, sausages, vegetables, pies and more. It’s just as rich and flavoursome as classic gravy so you can pour it over vegan or meat dishes. The gravy is gluten and dairy free, making it suitable for most dietary requirements.

Serving suggestions
